Air Fryer Sausage and Vegetables: One-Basket Dinner

Some nights you want dinner to basically make itself. This is that dinner. Sausage and vegetables in the air fryer: chop, toss, dump in the basket, shake once, eat. Twenty minutes, one basket to wash, and it tastes like you roasted everything in the oven for an hour.

The air fryer is weirdly perfect for this — the high heat caramelizes the vegetables' edges while the sausage renders and gets those crispy browned bits. It's a sheet-pan dinner without the sheet pan.

The Cut-Size Trick for Even Cooking

Here's the only thing that can go wrong: uneven pieces. If your potato chunks are huge and your pepper strips are thin, the peppers burn before the potatoes soften. The fix is boring but effective — cut everything to roughly the same size, about 1-inch pieces.

Harder vegetables (potatoes, carrots, butternut squash) need a head start or smaller cuts. Softer ones (peppers, zucchini, onions, mushrooms) can go bigger. If you're mixing hard and soft, cut the hard ones smaller — about 3/4 inch — and the soft ones at a full inch. They'll finish together.

Which Sausage to Use

Honestly? Whatever you like. Italian sausage (sweet or hot) is the classic — the fennel and seasoning perfume the whole basket. Kielbasa is smoky and great. Chicken-apple sausage keeps it lighter. Chorizo brings serious flavor but renders a lot of fat, so go easy on added oil with that one.

Slice the sausage into 1/2-inch coins. They'll brown on the cut faces and the fat renders into the vegetables, which is... kind of the whole point. Pre-cooked sausage (like kielbasa) just needs heating through; raw sausage needs to hit 160°F (71°C) internal — check the thickest coin.

DinnerSolved tip: Toss everything with oil and seasoning in a big bowl BEFORE it goes in the basket, not in the basket. You'll get way more even coating and you won't scratch your basket's nonstick surface with tongs.

Timing: 400°F for 15 to 20 Minutes

400°F (204°C), 15 to 20 minutes, shaking the basket at the halfway mark. That's the whole method. Check at 15 — if the veggies are tender with charred edges and the sausage is browned, you're done. Root vegetables might want the full 20.

Don't overcrowd. I know the basket looks like it can hold more. It can't, not if you want browning instead of steaming. Two batches beats one soggy batch.

Combo Ideas

  • Italian: sweet Italian sausage + bell peppers + onions + zucchini. Serve over pasta or in rolls.
  • Smoky: kielbasa + potatoes + carrots + onions. Mustard on the side.
  • Fajita-ish: chorizo + peppers + onions. Warm tortillas, done.
  • Fall: chicken-apple sausage + butternut squash + Brussels sprouts + red onion.

Ingredients

  • 1 lb (450 g) Italian sausage (sweet or hot), cut into 1/2-inch coins
  • 2 bell peppers, cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch wedges
  • 1 zucchini, halved lengthwise and cut into 1-inch pieces
  • 1 lb (450 g) baby potatoes, quartered (or cut hard veg to 3/4 inch)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Toss the sausage, vegetables, oil, salt, pepper, garlic powder, and Italian seasoning in a large bowl until evenly coated.
  2. Preheat the air fryer at 400°F (204°C) for 3 to 5 minutes.
  3. Add half the mixture to the basket in a single layer — don't overcrowd.
  4. Cook 8 minutes, shake the basket well, then cook 7 to 10 minutes more until vegetables are tender with charred edges and sausage is browned (160°F/71°C for raw sausage).
  5. Repeat with the remaining mixture. Serve hot.

Storage

Refrigerate within 2 hours; keeps 3 to 4 days. This is genuinely great as leftovers — the flavors meld overnight. Reheat in the air fryer at 375°F for 4 to 5 minutes to re-crisp the edges. Also excellent cold in a lunch container, if you're into that.
