Honey mustard is one of those flavors that shouldn't work as well as it does. Sweet + tangy + a little sharp — it hits every craving at once. And on chicken? It caramelizes in the oven into these sticky, golden, slightly charred edges that are genuinely hard to stop eating.
This is a sheet-pan situation, which means the whole meal — chicken and vegetables — cooks on one pan while you do literally anything else. Twenty-five minutes later you've got four lunches. Meal prep doesn't get lazier than this, and I mean that as a compliment.
The Sauce (Four Ingredients, Zero Excuses)
Dijon mustard, honey, olive oil, garlic. That's it. Whisk them together and you've got a sauce that does triple duty: marinade, basting glaze, and dipping sauce for the finished chicken.
A quick note on the mustard: use Dijon, not yellow. Yellow mustard is fine on a hot dog, but it's one-dimensional here. Dijon has this wine-y sharpness that balances the honey's sweetness. Whole-grain Dijon works too and looks gorgeous — those little seeds toast up in the oven.
Reserve about a third of the sauce before it touches raw chicken. That clean portion becomes your dipping sauce for the week. The rest goes on the chicken. This isn't being fussy — it's basic food safety, and it takes five seconds.
Sheet-Pan Honey Mustard Chicken Meal Prep
Here's the weeknight-friendly method:
- Chicken: thighs or breasts, your call. Thighs stay juicier through reheating; breasts are leaner. Either works — just adjust the time.
- Vegetables: pick sturdy ones that roast well — broccoli, Brussels sprouts, carrots, red onion, sweet potato. Cut them roughly the same size so they cook evenly.
- The layout: chicken in the center, veg around the edges. Everything gets brushed with sauce. Into a 425°F (220°C) oven for 22 to 28 minutes.
Halfway through, brush the chicken with more sauce. That second coat is what builds the sticky caramelized glaze. Don't skip it.

- Cook chicken to 165°F (74°C) internal temperature. Thighs are forgiving; breasts dry out fast past 165°F, so check early.
- Cool within 2 hours, then portion into containers with the vegetables.
- Refrigerate 3 to 4 days at or below 40°F (4°C).
- Reheat to 165°F (74°C). The oven (375°F/190°C, 10 minutes) revives the crispy edges best; microwave works but softens the glaze.
- Reserved dipping sauce keeps up to a week in the fridge.
