Cod is the fish for people who think they don't like fish. Mild, flaky, no strong flavor to argue with — it's basically a blank slate that happens to be good for you. The air fryer treats it well: a quick cook keeps it moist, and a light breading gives you that fish-and-chips crunch without the vat of oil.

The trick with cod is gentleness. The fillets are delicate and flake apart if you look at them wrong. Handle with care and you'll be rewarded.

Breaded or Not? Both Work

You've got two good paths. Simply seasoned (oil, salt, pepper, paprika, lemon) is the fastest — 10 minutes and dinner's ready, and you really taste the fish. Lightly breaded (flour, egg, panko) gives you crunch and feels more like a treat. Both cook at the same temp and time.

If you bread them, keep the coating light. A heavy armor of breadcrumbs overwhelms delicate cod. A thin, even layer is plenty — and press it on gently. Cod fillets break; don't manhandle them.

Air Fryer Cod Temp and Timing

400°F (204°C) for 10 to 12 minutes. Cod is done at 145°F (63°C) internal, when it flakes easily with a fork and looks opaque all the way through. No flip needed for thin fillets; thicker center-cut pieces benefit from one gentle flip halfway — use a wide spatula and commit to the motion. Hesitation breaks fish.

Start checking at 10 minutes. Cod goes from perfect to dry quickly because it's so lean, and carryover heat keeps cooking it after you pull it out. When in doubt, pull it a touch early.

Keeping Fillets Intact

  • Pat dry, always. Wet fish steams, sticks, and falls apart.
  • Preheat the basket. Hot surface, instant sear, less sticking.
  • Don't move them. Place once, cook, remove. Every repositioning risks breakage.
  • Even thickness helps. Fold thin tail ends under, same trick as tilapia.

Serving Ideas

Breaded cod + fries (air fryer, obviously) + tartar sauce = homemade fish and chips that doesn't require a fire extinguisher. Simply seasoned cod goes beautifully over a big salad, alongside roasted vegetables, or in tacos with cabbage slaw and lime crema. A squeeze of lemon is non-negotiable either way.

Ingredients

  • 4 cod fillets, 6 oz (170 g) each, about 1 inch thick
  • 1/3 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Olive oil spray
  • Lemon wedges and tartar sauce, for serving

Instructions

  1. Pat the fillets very dry. Fold thin tail ends under for even thickness.
  2. Set up three dishes: seasoned flour; beaten eggs; panko mixed with salt, pepper, garlic powder, and paprika.
  3. Dredge each fillet gently: flour, egg (let excess drip off), then panko, pressing lightly.
  4. Preheat the air fryer at 400°F (204°C) for 5 minutes. Line the basket with perforated parchment if you like.
  5. Spray fillets lightly with oil. Arrange in a single layer with space between them.
  6. Cook 10 to 12 minutes until golden, flaky, and 145°F (63°C) inside. Flip gently halfway only if the fillets are thick.
  7. Serve immediately with lemon and tartar sauce.

Storage

Refrigerate within 2 hours; good for 3 to 4 days. Cold cod in a salad or wrap the next day is genuinely nice. To reheat, 3 minutes at 350°F in the air fryer — just until warmed to 145°F. Don't push it; reheated fish dries out fast.
