Bell peppers go on sale, you buy eight, then panic because what are you going to do with eight bell peppers? Stuffed bell peppers, that is what. Rice, beans, cheese, sauce — the cheapest filling imaginable — baked inside those peppers until everything is melty and the peppers are sweet and tender. Under seven dollars for four big servings.

This is also secretly a clean-out-the-fridge recipe wearing a fancy outfit. Half an onion, leftover rice, the last of the black beans, cheese ends — it all goes in. The pepper is just an edible bowl that makes leftovers look intentional.

Par-Bake the Peppers (Trust Me on This)

The number one stuffed pepper failure is crunchy peppers with a perfect filling. Raw peppers need longer in the oven than the filling does, so they come out squeaky while everything inside is done. The fix: bake the empty pepper halves for 10 minutes before you fill them. They soften just enough that the final bake finishes them perfectly.

Cut them in half lengthwise instead of cutting the tops off. Halves sit stable in the dish, hold more filling, and are easier to eat. Scoop out the seeds and white ribs — the ribs are bitter, the seeds are just in the way.

The Filling: Cheap, Flexible, Forgiving

Cooked rice, black beans, a can of diced tomatoes (drained a bit), corn if you have it, cumin, chili powder, garlic. Stir it together, taste it — it should taste good on its own, because the pepper is not going to fix bland filling. Then pack it into the par-baked halves, top with cheese, and bake until the cheese is golden and bubbly, about 20 minutes.

Got ground beef or turkey? Brown half a pound and add it — the recipe absorbs it happily. Leftover taco meat? Even better. But honestly, the vegetarian version is so satisfying that meat feels unnecessary. The beans bring protein, the cheese brings richness, the rice brings bulk.

DinnerSolved tip: Buy peppers when they are on sale and freeze them halved and seeded. They go straight from freezer to par-bake — just add 5 minutes. Future stuffed peppers, zero planning.

These reheat beautifully, which makes them ideal for lunches. Assemble a full batch on Sunday, bake, portion into containers. Four days in the fridge, no problem. Reheat in the microwave 2–3 minutes or in a 350°F oven for 15. The peppers hold their shape, the cheese re-melts, and your coworkers will be jealous.

Cost-wise: peppers are the main variable — buy them on sale and this is a $5 dinner; at full price it is still under $8. Either way, it is a lot of food for the money, and it looks like you tried much harder than you did.
