Loaded potato skins are the appetizer equivalent of a warm hug. Crispy potato shell, molten cheese, salty bacon, cool sour cream — every bite hits a different note. They're the first thing gone at every party I've ever been to, and the air fryer makes them almost too easy.
The secret is the double cook: crisp the empty skins first, then load them and melt. Two short rounds, maximum crunch. Here's the reliable standard method.
Start With the Right Potatoes
Russets. Not reds, not Yukon Golds — russets. Their thick, sturdy skins crisp up and hold their boat shape, and the fluffy interior scoops out cleanly. Pick medium potatoes, roughly the same size, so they cook evenly. Scrub them well; you're eating the skin, after all.
Bake or microwave the whole potatoes first until tender — the air fryer can do it from raw, but it takes forever and the skins don't crisp as well. Microwave 8 to 10 minutes (pierce them first), or bake at 400°F for 45 to 50 minutes. Then cool just enough to handle.
The Double-Cook Method
Halve the cooked potatoes lengthwise and scoop out most of the flesh, leaving about a 1/4-inch shell. (Save the scooped potato — it's tomorrow's mashed potatoes or soup thickener. Don't waste it.)
Round one: brush the skins inside and out with oil, season with salt and pepper, and air fry at 400°F (204°C) for 8 to 10 minutes until the edges are golden and crisping. This is where the crunch comes from — don't rush it.
Round two: fill with shredded cheddar and crumbled bacon, then back in at 375°F (190°C) for 3 to 4 minutes, just until the cheese melts and bubbles. Lower temp here so the cheese melts without the already-crisp skins burning.
DinnerSolved tip: Shred your own cheddar. Pre-shredded cheese has anti-caking starch that makes it melt grainy. A box grater and two minutes gives you dramatically better melt.
Loading Ideas Beyond the Classic

- Buffalo chicken: shredded buffalo chicken, blue cheese crumbles, drizzle of ranch.

Assembled leftovers keep 3 to 4 days refrigerated; reheat at 375°F for 4 to 5 minutes to re-crisp. They also freeze well for up to 3 months before the final cheese melt.
