Air Fryer Stuffed Peppers: Weeknight Comfort, Hold the Oven

Stuffed peppers are one of those dinners that feel like a project — which is a shame, because they're really just a vehicle for whatever savory filling you're in the mood for. The air fryer shrinks the whole thing down to weeknight size: no heating the big oven, no 50-minute bake. Tender peppers, hot filling, melty cheese, done in half an hour.

The classic filling is seasoned ground beef and rice, and honestly it's classic for a reason. But once you know the method, the filling is whatever you've got.

Pick Peppers That Sit Still

Look for bell peppers that are wide and flat-bottomed — they'll stand upright in the basket without tipping over and spilling filling everywhere. Give them a test wobble in the store. Red, yellow, and orange peppers are sweeter; green ones are a little more bitter and hold their shape best. Any color works.

Cut the tops off and scoop out the seeds and white ribs. Don't cut them in half lengthwise for the air fryer — whole upright peppers cook more evenly and look better. If a pepper won't stand, shave a paper-thin slice off the bottom to level it. Just don't cut through.

How Long to Air Fry Stuffed Peppers

360°F (182°C) for 18 to 22 minutes. That's the reliable range for peppers stuffed with a pre-cooked filling. The lower temp (vs. the 400°F you'd use for plain roasting) gives the pepper walls time to go tender without the cheese on top burning.

Important: cook your filling first. Raw ground meat inside a pepper won't reliably reach safe temp in the time the pepper needs. Brown the meat, cook the rice (or use leftover rice — even better), mix it all up, then stuff. The air fryer step is about melting, melding, and tenderizing — not raw-to-cooked.

Filling Ideas Beyond Beef and Rice

  • Italian: Italian sausage, marinara, cooked orzo, mozzarella, basil.
  • Veggie: quinoa, black beans, diced tomatoes, corn, cumin — hearty without meat.
  • Breakfast: scrambled eggs, sausage, hash browns, cheddar. Yes, really. Weekend game-changer.

The formula stays the same whatever you choose: cooked protein + cooked grain + sauce or seasoning + cheese on top at the end.

Ingredients

  • 4 large bell peppers (any color), tops cut off, seeded
  • 1 lb (450 g) ground beef (80/20)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1½ cups cooked rice (white or brown)
  • 1 cup marinara or tomato sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella
  • 2 tablespoons chopped parsley or basil

Instructions

  1. Brown the beef with the onion in a skillet over medium-high heat, breaking it up, 6 to 8 minutes. Add garlic in the last minute. Drain excess fat.
  2. Stir in the cooked rice, marinara, Italian seasoning, salt, and pepper. Taste and adjust seasoning.
  3. Stand the peppers upright in the air fryer basket. Spoon the filling in generously, mounding slightly.
  4. Cook at 360°F (182°C) for 15 minutes.
  5. Top each pepper with mozzarella. Cook 3 to 4 minutes more, until the cheese is melted and the peppers are tender when pierced.
  6. Rest 5 minutes — the filling is molten. Shower with herbs and serve.

Storage and Reheating

These keep 3 to 4 days in the fridge and reheat shockingly well — the air fryer at 350°F for 5 to 6 minutes brings back the tender pepper and melty top. (Microwave works too, but the pepper goes a bit soft.) They also freeze well for up to 3 months; thaw overnight before reheating. Make eight instead of four and thank yourself later.
